Rice & Black Beans Burritos

Ingredient List

  • 1 package (215 g) Old El Paso™ Mexican Rice
  • 1 can (12 oz/341 mL) whole kernel corn
  • 1 can (14 oz/398 mL) Old El Paso™ Refried Black Beans
  • 6 Old El Paso™ Large Flour Tortillas, warmed
  • 1 cup (250 mL) chopped red or green pepper
  • ½ cup (125 mL) chopped green onions
  • 1 ¼ cups (300 mL) shredded cheddar cheese

Preparation

  1. Prepare rice according to package directions.
  2. During last 5 minutes of simmering time, stir in corn.
  3. Evenly divide and spread refried beans over 6 tortillas.
  4. Top each with about ⅔ cup rice and corn mixture.
  5. Top with peppers, green onions and cheese.
  6. Roll up to serve.
