Ingredient List
- 1 package (215 g) Old El Paso™ Mexican Rice
- 1 can (12 oz/341 mL) whole kernel corn
- 1 can (14 oz/398 mL) Old El Paso™ Refried Black Beans
- 6 Old El Paso™ Large Flour Tortillas, warmed
- 1 cup (250 mL) chopped red or green pepper
- ½ cup (125 mL) chopped green onions
- 1 ¼ cups (300 mL) shredded cheddar cheese
Preparation
- Prepare rice according to package directions.
- During last 5 minutes of simmering time, stir in corn.
- Evenly divide and spread refried beans over 6 tortillas.
- Top each with about ⅔ cup rice and corn mixture.
- Top with peppers, green onions and cheese.
- Roll up to serve.
